What I Eat in a Day on Low Carb // Keto Recipes // Working Mom Meals


[Music] hey guys it’s done welcome back to my channel and welcome back to another what I eat in a week video if you’re new to my channel I’m a full-time working mom I have two kids Connor is six Kiera is nine I work as a nurse outside the home I work in more of an administrative role so most weeks I’m working 40 plus hours a week normal hours 7:00 to 4:00 or whatever my husband is mechanical engineer he works outside the home as well and so in these videos I just like to show what I eat for breakfast lunch and dinner during the work week this week I’m experimenting with actually showing you guys the weekend to a general principle I try to follow is that I tried to do mostly low-carb and keto during the work week and then on the weekends like you know we might go out to eat or have people over for a barbecue or go out for beers or whatever so that’s the general principle I try to follow I don’t want to be disingenuous and say that you know I eat keto all the time I low-carb all the time I’m perfect if you want to see someone that eats perfectly a hundred percent of the time this is not your channel you might want to go find someone else but sort of what I’m trying to do is just give people ideas of what they can make for supper what they can meal prep what they can bring to work for lunch or what they can make it home for lunch I feel better when I eat mostly low carb my goal is not like drastic weight loss I mean obviously as a side effect if I lose a little bit of weight that’s fine but I just wanted to put that out there because I do label these videos as keto friendly and low carb friendly and I don’t want people to think that I am advocating that you eat everything that I eat if you’re doing strict keto because like sometimes I eat hummus sometimes I eat fruit obviously those are things that you really are not supposed to have if you’re doing strict low carb so I just wanted to say that in the beginning just so that people aren’t confused if they see me eating something like that so this week is gonna be a busy week we are starting back at school and the kids are starting back with after-school activities so soccer and swim and my meal plan this week might be a little bit too ambitious for that we’ll see but we’ll kind of see how it goes and I hope you guys enjoy this video and get some new ideas for yourself okay good morning and happy Monday I’m starting out my day just like usual with a coffee with some heavy cream sometimes I use heavy cream and sometimes I use half-and-half it just depends on what I have in the refrigerator but I am using my new milk frother that I got on Amazon I will leave a link to that down below if you guys are interested it looks like I’m also spilling some on the counter but I love how it mixes up the cream with the coffee and if you do it just right you can also make a little bit of froth on the top which is really delicious as well okay so it is about 9:15 and I’m going to eat my breakfast i meal prep this weekend at some of these egg bites this is the Starbucks sous-vide recipe that is meant to make in the instant pot but I just like to bake them in the oven and muffin cups if you are interested in seeing how I make these go ahead and check out my last meal prep video I will show those in there and then I will link the recipe down below if you’re interested in checking that out when I have one sausage one made with sausage one made with bacon and they have Gouda cheese in them and then with them I like to eat these little guacamole cups from Aldi these are just the mild the guacamole cups they’re pretty good and then I’m also having one of these sparkling ice orange mango I found these at Aldi also they’re just like a little cans knew your calories zero sugar so that is what I’m having for breakfast okay it is about eleven o’clock and having a dr. pepper so it does 1:30 and here is what I concocted for lunch this big salad bowl in the bottom I put some romaine lettuce that I washed and prepped during my meal prep this weekend I put some cut-up Tomatoes some cut-up cucumbers some red bell pepper I also added some of this 1000 day aged Gouda from Trader Joe’s this is really good cheese and then I added some walnuts to the salad for crunch and then this is the dressing that I’m using it’s the Cindy’s kitchen roasted red pepper it has 2 grams of carbs per 2 tablespoons and then on the side I just have some of the leftover salmon that we grilled this weekend so I heated that up just for a little bit just so it wasn’t ice-cold in the microwave and squeeze some lemon over it so I am going to go enjoy my lunch first knock this afternoon I’m just having some pickle roll-ups this is just him rolled up with whipped cream cheese and a pickle inside really yummy okay so tonight for dinner I am making meatloaf I just took this out of the oven I like to bake my meatloaf on a sheet tray rather than in a loaf pan that way the grease can kind of drain off and then I top it with barbecue sauce I used some sugar-free barbecue sauce and some bacon so I’m gonna put some foil on this and let it rest and then on this side I just sauteed some frozen green beans after I steamed them in butter with some garlic and some bacon and then this is the mashed cauliflower from Trader Joe’s I have another bag I’ll show you this is what it looks like it comes in the frozen section it’s actually pretty good I would recommend it so that is what I’m making tonight [Music] okay this morning it is Tuesday it is almost 10 o’clock so I’m eating breakfast a little bit late I’m eating it two of the egg bites that I meal prepped along with a quarter of one of the keto bagels that I also prepped and then for lunch today I’m having leftovers this is just a leftover grilled a pork shop along with some of the loaded cauliflower baked that I’ve been really loving lately this doesn’t look too appetizing heated up but I promise you it’s really good I’ll leave the link to the cauliflower recipe down below if you are interested and I would totally recommend trying it for dinner tonight I decided to make myself a fried keto goat cheese salad I got this recipe off of the keto Connect YouTube page so I will leave a link to that video down below but basically you just take your goat cheese and bread it with I used almond flour egg and pork rind crumbs and then fry it in some canola oil or vegetable oil these are what they look like when they’re done they are really really delicious if you like fried goat cheese and then I’m also putting that on a salad with some spinach along with some strawberries I’m using this Newman’s Own balsamic dressing which only has two carbs per serving and on top of my salad I also added some sliced almonds and so I will just put the goat cheese on top and enjoy it I was the only one that ate this because I’m the only one that really likes goat cheese but it was still delicious you can see that the cheese is nice and soft and creamy inside okay so happy Wednesday this morning I was really busy at work and so I just ran down and grabbed an iced latte it from the coffee shop and then for an early lunch I ate some caprese salad that I prepped the night before this is just some cherry tomatoes some mozzarella balls basil olive oil some seasonings as well as a tiny little bit of balsamic vinegar so it is currently 4:30 and I just got back into town from work the dog is out of dog food here actually one of her chores is to feed the dog and so she texted me this morning and said that Murphy was almost out of food so anyway I’m gonna stop in here and grab some dog food and I ate on the way home one of these salads that I prepped this weekend it’s got broccoli ranch dressing sunflower seeds cheese and bacon bits it’s pretty good I feel like I did a really bad meal plan this week because I did not make what I was supposed to make last night I don’t even know what’s on it I think one of the things I was supposed to make was shrimp scampi and zoodles and now I’m just like oh I don’t want to make that because I don’t want to thaw the shrimp and I don’t know maybe I’m just making it up in my head to be harder than it actually is but I definitely need to modify my dinner plans for next week because Connor started soccer and swim and he’s got practice like four nights a week two nights each and so I just need to make sure that I’m planning like realistic things and then like when I do my meal prep on the weekends usually I just meal prep for snacks and lunches but maybe I need to shift my focus and do some more dinner meal prep so that will be a thought for this weekend and I’ll show you guys what we for dinner okay tonight you can see I’m making a stellar choice in eating some Cheetos it was a turkey sandwich again I think that my meal plan was way too ambitious for this week with all the kids activities we had going on so not the best choice and honestly I was still hungry later you can see that now it’s 8:30 and since I didn’t get all my protein and earlier I am now eating a taco salad with some lettuce cheese and some salsa and sour cream okay so it’s Thursday morning and I forgot to start filming this before I almost finish it all but I’m just having a few of the egg bites I prepped along with some guacamole for lunch we mean a couple co-workers walked across the street they have food trucks on Thursdays and so I got this jerk chicken salad with mango it was okay I probably wouldn’t order it again but it was decent okay so it is currently 4:30 in the afternoon and I’m here picking Kiera up Connor actually had a doctor’s appointment today he had to go see ENT because he’s actually gonna have to have his tonsils out they’re huge and he’s been having issues with sore throats and when he’s sick they get really really huge so he’s gonna have them out September at the end of September I can’t remember the date but you know what god bless my husband because he picked him up and met me at the doctor today and by the time I had gotten there he had filled out all of the paperwork you know like when you’re a new patient you have to fill out like 15 forms oh my god I could have like kissed him right there because it always seems like I’m the one that fills out all the forms that because he won’t do it just cuz I do it but anyway that was good so Wow I drove home I had a snack of these turkey sticks from Aldi yes I burnt my arm on the oven the other day these are really good if you’ve never had these before I know there’s like a name-brand of them that you can get at other stores but I actually like these better and they’re super cheap at Aldi so I had a couple of these in two cheese sticks I’m not sure what I’m gonna make for supper tonight but I will show you that when I get home tonight for dinner I am making the chicken popper casserole along with the baked cauliflower that I mentioned earlier in the video the chicken popper casserole recipe is from the keto made easy cookbook and I’ll link that down below but basically it’s kind of like a jalapeno popper flavored chicken it is really really rich but it is good I would say that if I made it again I probably wouldn’t make it with the cauliflower bake just because both dishes are really rich so it was kind of a little bit much to have them both together but both totally delicious dishes you can see here what I have on my plate and I really also like the addition of the bacon in the popper casserole I also think that would make a good dip sort of like buffalo chicken dip I don’t know I might try that sometime but Friday morning I am getting an omelet from the cafeteria because I was out of my egg whites in this omelet I have him pepper jack cheese and tomatoes for lunch today I’m having some of the avocado tuna cakes that I meal prepped the previous weekend I’m eating these with a little bit of sriracha mayo these were a little bit dry when I heated them up so I was glad I used them with the mayo but if I made them again I might have them with a salad with some dressing and then I’m having some sliced cucumber with just a couple tablespoons of lemon hummus from Whole Foods so that was my lunch today and then for an afternoon snack I’m just having some of these pickle roll-ups that I prepped over the weekend these are just dill pickles with cream cheese and ham rolled up all right so it is Friday afternoon it is a little after three o’clock I just got off work I am headed at home to meet Adam and we are going to go for happy hour at one of their breweries where we are mug club members where we live and so I’ll probably have a few beers there originally I was actually thinking about getting Olive Garden for dinner like doing the to go ordering but we’ll probably just go there and then when we’re done we’ll go pick the kids up and go out to eat somewhere before soccer practice [Music] tonight for dinner we went to a pizza ranch which is basically just like a pizza buffet I basically got a big salad with some cottage cheese on the side I did have one bread stick in a couple pieces of thin crust pizza but Connor had soccer practice at 6:30 so it’s kind of an odd time and we definitely needed to go grab something quick that we could have before we took him to practice okay so it is Saturday morning and again I’m having a cup of coffee I’m just using my frother and frothing that with a couple tablespoons of heavy whipping cream and I really really have enjoying this broth or you can also use it to make homemade whipped cream if that’s something that you do to have with berries or on top of your drinks or anything like that so again this is linked in the description box below it’s very inexpensive and an awesome tool to have in your kitchen okay so it’s about 10:30 I just stopped by Starbucks and got some of these chicken chorizo egg bites they were out of the egg and bacon and I’ve never had this kind before and they actually don’t smell that great so I’ll have to let you know what I think of them but I feel like I remember when these first came out asking one of the braces at Starbucks if they were good and he was like I don’t really like them so anyway I’ll try them I’ll give it a shot and then I also got a iced latte with extra shot and almond milk which is my favorite drink right now from Starbucks later in the morning I just had some beef jerky I picked that up at Menards while we were there getting at some home-improvement supplies oh I have turkey roast beef ham lettuce tomato mayonnaise pickles olives same as mine except to ranch except Carl likes ranch okay so it’s Sunday morning and I decided to make some homemade breakfast pizza this morning I basically just used a store-bought pizza crust I put some cheese sauce on it that was also prepared and some scrambled eggs some Monterey Jack cheese and some crumbled sausage the whole family really liked it so that was a win I only had one piece and then I also had an iced latte this is just made with some espresso and some almond milk I just made it at home later on that day we had a birthday party to go to is actually at around 10:00 or 10:30 in the morning and I probably could have done a better job of bringing snacks with me I ended up getting hungry while I was there and so I ate a piece of cake cake really isn’t my favorite but again I didn’t prepare very well since I ate the cake I was not too hungry for lunch but in mid-afternoon while I was meal prepping I did cook myself a pizza on naan bread this is just the naan bread from Aldi I put some marinara sauce on top some feta cheese some mozzarella cheese some thinly sliced jalapeno some bacon and some pepperoni those are my favorite toppings to have on a homemade pizza for dinner that night for the family I heated up some pulled smoked chicken that I had in the freezer and then Adam actually made some homemade barbecue sauce I’ll try to link that down below if he can give me the recipe but it turned out really good and then along side I just made some corn on the cob that’s buttered up and then I also roasted some tiny little potatoes that I got from Aldi okay so since I didn’t really eat dinner with my family I am hungry later on that night so I had just some Triscuits some ham cold cuts from the fridge along with some Havarti cheese also sliced up so kind of just made my own lunchable for a bedtime snack okay so we have a brisket that Adam made we have cheesy potatoes that Kristen made pasta salad salad suddenly salad homemade barbecue sauce recipe link down below deviled eggs coleslaw watermelon dip chips and meat and cheese this a happy Labor Day [Music] okay guys so that is it for this week’s what I eat in a week video as you can see I kind of fell off the rails at the end of the week eating a bunch of carbs but I am on the way again back this week and like I said I’m not all about perfection I’m about showing you
