Protein Pancakes NO POWDER! – Mind Over Munch Kickstart Series

Hey guys! I am so excited for today’s recipe
because a lot of you have requested this. A healthy pancake recipe! This recipe is gluten
free, it’s guilt free and it is packed with protein but the best part is you don’t use
any protein powder. The batter that I’m going to show you is just a base so you can add
whatever flavor ingredients you want when you make it and it will also work in a waffle
iron. For my protein pancakes you can start by combining
oats, egg whites, cottage cheese, baking powder, vanilla, coconut flour, and a pinch of salt.
If you don’t have coconut flour any flour should work for this recipe. It’s really just
used as a thickening agent but because coconut flour is more dense than other flours you
might have to substitute a little bit more of a wheat based flour. So that is the base
recipe. To flavor these today I’m going to add bananas
and blueberries. I like to add some fruit into the batter for flavor and color and then
add additional fruit to the batter when it’s cooking. Blend all ingredients until fully
combined. You are looking for a really nice pancake batter mixture here. You can always
thicken it up with a little more coconut flour or use a little bit of water to thin it out. Now it’s time to cook ’em up! I like to use
my handy dandy batter blaster to distribute the batter but you can use whatever other
inferior utensil you prefer. And today I’m using my electric griddle to cook these up
but of course a skillet or a frying pan will work just fine. To my sprayed pan I like to
add a few pieces of fruit and then the batter on top. This way I’m in full control of making
sure every bite of pancake gets a little bit of fruit. And again those fruit chunks are
optional but recommended. Cook for just a few minutes until the edges
begin to set and the tops start to bubble. And then you can flip ’em like normal pancakes.
Allow to cook for another minute or two before plating and devouring. This entire recipe
is only 250 calories with about 25 grams of carbs, only three grams of fat and a whopping
25 grams of protein. That’s not bad for no powder. And I promise you they taste way better
than pancakes made with whey protein because anytime I cook with whey protein it comes
out gummy and nasty. And remember you can totally make this in
a WAFFLE iron which I actually prefer because it gives it a nice crispy coating. So that
is my protein packed pancake recipe. Get creative with whatever fillings you want to add-in

  3. I should say that the bits of pancake I was able to save were very tasty. I tried these in a non stick pan with coconut oil and a buttered waffle maker, both sticked pretty bad. I would like to be able to make these!! But I don't have a skillet. Any suggestions?

  7. OMG i made them this morning and they were PERFECTION!! I had tried many other healthy pancake recipes but they were all too dense and would be a nightmare to flip. However, this one was VERY similar to regular pancakes, fluffy, delicious and very easy to make!

Hi I have a question, it has nothing to do with this video but you seem like a person with knowledge so I thought I would ask you 🙂 So, I'm not vegan or anything like that, I just started eating healthy a while ago so I have very little knowledge and still learning. I had this jar of coconut oil which had no flavor or scent of coconut, I used it up and bought a different one and this one definitely has both coconut flavor and scent. Can you tell me what the deal is? 😉 I'm confused. Is one better than the other? Healthier? Help! 😉

  9. Have to ask once again, can we add brown rice flour instead if coconut flour? I have so much brown rice, I went crazy and bought a ton, then I found out how to make brown rice flour. I traded my bullet for a vitamix, love it but you know I miss my bullet, now  I have to lug  out my coffee grinder, use to do that with the bullet grinder blade. I love your big red one. I mean the bullet silly.

  10. Can I put  flour instead of coconut flour?  I'll try to get some coconut flour though.  I like to use coconut oil often, do you use coconut oil much?    I haven't noticed.

  11. Best pankakes ever!!!:) low in calories ,high in protein and so delicios…I olso adding 10 grams grinded Flax seed to get more protein and its good Omega 3 source and 5 grams Cocao pouder..It is extra 32 calories but olso 4.55 grams of protein:)

    I've tried it with :
    1 cup Oatmeal flour
    2 tsp Baking powder
    Pinch Salt
    1 cup Milk
    1 Egg
    2-3 tbsp Black berry

    It was fluffy and tasting great

    But I'll try it next time with coconut milk, I'm not sure if this will work

  31. I tried these the other day with whole wheat flour to replace the coconut flour and they were SO good and satisfying. best protein pancakes I've tried to this day. I'll going to have to buy some coconut flour to try it with that. @ Mindovermunch does coconut flour has a sweeter taste or any taste? if so how would you describe it.

  40. I just made these and they came out perfect! Even my husband, who is skeptical of healthy versions of unhealthy foods, loved them! The texture was spot on – light and fluffy. The flavor was good on its own, but sooooo much better with fruit in the pancakes. I will definitely be making these again.
