being a low carb or keto diet and love the taste of lemon stay tuned [Music] hi my name is Katrina welcome to the organics channel we’re together we bring a variety of healthy easy and delicious recipes into the kitchen today we’re going to be making keto lemon poppy collagen muffins in a large mixing bowl add three cups of almond flour which is basically just almonds that have been ground up into a flour so it’s grain free and rich in vitamins minerals fiber and protein one half of a cup of melted ghee which is a clarified butter and it’s early similar to coconut oil in that it’s a great source of energy next three large whisked eggs now if possible I highly recommend using the free-range organic eggs and these are different than just the cage free hitch free simply means that the chickens are not kept in a cage but oftentimes they still don’t have the room to move around and be healthy so you always want to look for the free-range three tablespoons of fresh lemon juice and the zest of one lemon and when you’re using the peel like this please be sure to use organic three tablespoons plus one teaspoon of Lepanto this is a sweetener that consists of urethral tall and monk fruit extract I love using it because it’s a one-to-one substitute but you can always use your favorite sweetener here one teaspoon of baking soda next we have two tablespoons of poppy seeds which are a great plant-based source of calcium a pinch or two of pink Himalayan salt or sea salt last add one scoop of organics collagen powder which is one of the cleanest collagen powders on the market today and it’s also a really great addition to add to many recipes in that it is odorless and tasteless mix all of your ingredients up really well now we’re ready to fill our muffin tins with our batter I’m going to be using these unbleached chlorine-free liners that I found at my health food store but you can simply just grease your pan using coconut oil [Music] place your muffins in a 350 degree preheated oven for about 16 to 18 minutes and you’ll know your muffin is done when you insert a toothpick into the middle and it comes out clean I just took my muffins out of the oven and I’m going to let them cool and then give them a taste so don’t go anywhere it’s time to give these muffins a try I’m going to bring in my professional taste tester Jeremy who always tells the truth about whether he likes something or not don’t you Jeremy I just gave them a little bit of a taste and they are super buttery it’s awesome with the ghee in there Oh looks pretty good it’s pretty good it’s nice and moist and if you really like the flavor of lemon it also it actually could have more lemon flavor if you wanted to add more maybe you could add in a little bit of the lemon essential oil into there mmm it’s really good yeah it’s pretty good yeah pretty good thanks for joining me today if you liked this recipe and want to see more than you know what to do subscribe to our Channel and leave your thoughts in the comment section below see you next time [Music]
