them no temptation of carbs and sugar here for this week we’re gonna do shortbread because I think is the essential biscuit it’s pretty much guaranteed that someone somewhere somehow at the bake of tomorrow will actually make shortbread so if you want to make any kind of shortbread and just build upon these are the three fundamental ingredients that you need to make simple stupid delicious keto from brand by the way let me show talk to Elliot the key to kitchen because he’s doing what I aim to do in the past few years and this year again undoing something slightly different and giving you an much better than I could again we try to keep things simple here the least amount of ingredients the least amount of time the least amount of work to make keto for bread you need just three ingredients from the mentally softened butter Alma flour sweetener boom done you need nothing else now technically a lot of people have been asking me during the years how come like technically you use these three ingredients with real flour and real sugar to make real shortbread but don’t stay together because gluten in flour how do they stay together I am still not quite sure but it tends to work but after that I started to be anxious myself so technically if you want to go and splurge on extra ingredients you can add a teaspoon of xanthan gum and not half a teaspoon of vanilla just to go crazy but again those are the two ingredients that’s the essential and most of these is in the method so let’s get started on the method get rid of your flour for a second our butter and our sweetener are gonna be the protagonist I’m gonna use amazing cash the whole because it’s actually the kind that they use at the bake of it I’m so glad that I can do something with this if you’re wondering why mine is from it’s from Amazon where it cost much much less than you would in Lakeland and such so let’s start off with the batter which needs to be softened which seems like not something so crucial but believe me I’ve tried other times and if I say it now is because it’s a certian it’s only the method again butter softened you aren’t going to need a spatula indeed and sweetener with all the patience in the world get your either blender with attachment for whisker or hand mixer like this and we creamed them together LP under fluffy and nice orders flow feels possible I mash it first because I know from experience [Music] it’s fat and sweet what’s not to like and a bit of salt yes it’s up to you if you decide to use unsalted butter or salted butter you will see that most recipes for shortbread will actually tell you unsalted I disagree with them because when you use salted butter like in this case the salt and the sweet of the sweetener will just bring each other out it’s much more of a layered flavor it tastes better it’s not just stomach English sweet it’s nice we are the young flower now because I’ve decided this is fluffy enough and again if you want to be extra safe and extra sure that all the effects of the gluten will still apply to your shortbread just add some xanthan gum now we are aiming for breadcrumbs it needs to be crumbs and a door it doesn’t need to be a butter if it’s a battery [Music] you will see that compared to my original simple stupid simple recipe for shortbread the amounts are slightly changed there’s a very important thing to notice in this case I’m using ground album which is basically the thick grainy almond flour that basically is almost put in a blender in the original recipe I was using fine and flour which is really rare to come by here in the UK so that’s one of the reason I’m not using it now but also that tends to be finer and defatted which means absorbs much much more which is why at the time I used basically half of this amount of flour that’s an option if you use final flour you will need less take that into consideration maybe check the original recipe if you’re using fine fine almond flour ground almonds are completely fine and this is how we’re doing it now let’s bring it more together with a spatula but it’s exactly the kind of crumbs and doughy consistency it is we want it now the absurd reality of this is that this is delicious cookie dough you can absolutely go and bake it and will make amazing shortbread and that’s what we’re going to do but if you decide that that’s where you stopped up I won’t blame you it’s basically marzipan but better if I have to give you an advice use an immersion blender we attack gem of a whisker not a mixer because some mixer can be very very violent like mine actually I’m generally considering in the months and weeks to come to start doing reviews of kitchen gadgets because I realized that sometimes they seem that I am challenged but sometimes the stuff that you pay is not worth it if you think that could actually be something useful do you leave me a comment and let me know and I will actually consider doing it because the thought came to me all there anyway cling film bacteria because it’s violent the actual trouble here is that shortbread is a method it’s not a recipe if it was a recipe would be mixed wound down and we will go in the oven right now as you can guess to stop what’s happening we have the cling film because for somehow keep together and then do shapes and and stuff I don’t know it’s the beauty of our chemistry as baking we need to go in the freezer we need to go in the freezer in the playing field I don’t like it it’s more time but it’s how it works if you try to skip the freezer you didn’t work for me but maybe it works for you in which case do let me know how you did because I don’t know how to ski the freezer right I have my my my cling film I have my beautiful beautiful crumbs of those well mixed all together all together now but do bake it do bake it and make a shortbread and make your friends amazed the thinking that they are completely sugar and flour free right I have a plan I know it doesn’t seem like that but I have a plan know what we do once it’s inside the cling film is we roll it trying to make it in for sausage because that’s what we would give the discs basically the round shortbread this is a log of sorts this is what we put in the freezer for at least half an hour if it’s an hour it’s better because then we’ll have to play quickly to cut it put it in the oven break it so let’s go in the freezer first shall we if you left your log in the freezer for half an hour good if you left it there for an hour even better because when you need to cut through it first they get a really really sharp knife try to go on forward motion rather than just squishing it down if it’s been an hour in the freezer it could work but if it’s been less than that it could squish your and you don’t want that once you cut it all you’re gonna get two bums because they are the ends of it they’re gonna taste Alicia they’re just gonna look not as pretty other than that you’re gonna have 12 more or mess around depending on how good you are which probably you are better than me as shortbread as you can see I’ve had some some mistakes here and you know I’m gonna show you here quickly how it’s gonna look when I actually cut it the reason why you didn’t necessarily see me cut it and then talk you through it is that there have been technical difficulties but you don’t really need to do that you don’t really need me to actually walk you through that you’ve seen it you cut it boom that was done and now this is what we have and we’re gonna go in the oven for 10 12 15 minutes the screen is gonna tell you the truth because I don’t remember right now and we’re gonna see how they come out 15 minutes 180 degrees Celsius which should be 350 375 fire at the screen Walter that’s rude that is the perfect land and temperature you need to make them blond but we browned edges which actually means that yes they have indeed cooked and you have proper cookies biscuits to be precise and this is what the purest simplest kind of shortbread Makita looks like tada do not for any reason whatever happens touch them once they’re out of the oven you pull them out of the oven you put them on your top hover rag and you leave them there as the yard forget about that for the very least half an hour and then maybe after that off an hour even put them in the fridge I left them out too just there to chill on the road for an hour because when they’re still hot they would be very soft today would crumble now as you can tell they stay together they’re a good cookie but stuff together look at this cookie look at this cookie ha ha ha cookie cookie cookie cookie cookie biscuit ok biscuit because we’re in British shares no flakes aren’t we bro notice that for extreme extreme safety we use the xanthan gum but as you’ve seen in the first video they just look exactly the same and they are just Almo flour sweetener and butter then if you want to go say if you wanna have more of a snap and all of that by all means but that’s all the stuff that you need here we have gone fancy you know what you want to go even fancier I don’t know what I’m gonna do tomorrow in the bake-off but in case they’re doing anything that is like bourbon add a tablespoon or two of cocoa and I think you’re gonna have chocolate shortbread just say it’s an idea that I’m throw-in there I haven’t tested it because I just want to give you the fundamentals with which then you will work with and you decide where to go but I really really want to make a chocolate shortbread should we make it too very short
