Keto Recipe: Garlic Chicken Pizza- In Memory of My Dad | Thomas DeLauer


I’m going into the personal vault with this one so before I start out on this pizza recipe I do want to make sure that I lay out why I’m doing this this isn’t just a recipe that I wanted to throw together just to give you another keto recipe honestly there’s thousands of keto recipes out there and a lot of people on YouTube just throw them together to try to get a lot of views but the reality is this one has a very very personal story attached to it so when I was in high school it was always my thing to go with my dad to round table pizza and have a garlic chicken pizza it was just our thing so I ran cross-country in high school so I’d go and I’d go to running practice and I would just burn a bunch of calories and I would just eat a copious amount of Pizza it was probably what helped contribute to me being so overweight later on but either way the point was is it was a very special thing to me and when my dad passed away last year it was something that kept on coming back as this a recurring thought it’s like this garlic chicken pizza that I could probably never have again right and I realized that the garlic chicken sauce really could be keto and then if we utilize a good cauliflower crust we could make it that way so in reality maybe in honor of my dad I could make this I couldn’t make a garlic chicken cauliflower crust pizza and you know I don’t know if I could top Round Table’s pizza not saying that round table was the healthiest choice in the world but at least I could try so I’m gonna give you the lowdown on how to make this I’ve got a keto white sauce that’s gonna end up being really really good so it’s gonna be a garlic sauce and then we’re gonna put chicken or you can put whatever else you’d want on us so basically are making a garlic chicken pizza alright so first thing that I want to start with the first thing I’m gonna do before I even touch the crust is I want to make this white sauce now normally white sauce is gonna have a bunch of heavy cream and a bunch of that stuff okay I don’t want that in there if I’m going to use dairy I want to keep it clean okay I want to keep it clean with grass-fed butter where I want to keep it with ghee I don’t want to be utilizing a bunch of heavy cream whenever possible simply because it’s so inflammatory and it’s so high in the wrong beta casein 8 proteins so all I’m gonna do here to start is I’ve got 1 cup of almond milk okay no caregiving in this almond milk so I’m gonna go and I’m just gonna add it to a mixing bowl it has to be warmed up if it’s not warmed up it’s gonna be very difficult to get on to the next steps ok next thing I’m gonna do is I’ve got 2 tablespoons of grass Kerrygold butter the reason I’m using the grass-fed is simply like you’ve probably heard the better omega-3 to omega-6 balance so if you’ve ever heard the saying you are what you eat ate it really rains true if the cows are eating a bunch of grain and they’re eating a bunch of soy it’s coming through in the dairy and you’re gonna have a high omega-6 profile giving you a plethora of inflammatory nonsense we just don’t want so I’ve got that in here and then I’ve got a tbsp of ghee ghee is just straight-up dairy fat there’s absolutely nothing else in it there’s no milk solids nothing like that so we’re not dealing with the inflammatory components we’re literally just dealing with the fat from it the reason that I’m using in there is it gives it that thickness and that consistency that you wouldn’t ordinarily get all right so I’m gonna go ahead I’m gonna start mixing this stuff to make sure that it starts to melt I want to make sure that that almond milk is really warm enough to get that melted down okay and then the next thing that I want to do in order to actually get this nice and thick is I’m gonna go ahead and I’m going to add some almond flour to it this is critical with what you do here you don’t want to be using regular almond flour you want to be using blanched almond flour you can find it at any grocery store it’s white okay it doesn’t have the actual shell of the almonds on it what happens is when you have the shell of the almonds you get all the phytic acid the phytic acid of what’s called a anti-nutrient an anti nutrient stops the absorption of things we want the blanched it’s just the inside of the almond so I have got a good half a cup there and I’m probably gonna end up adding even more because as long as this butter continues to not melt it’s gonna be very hard to mix but we can add as much as we need to to end up thiking it up and then I’m gonna go ahead and I’m gonna add garlic to the mix very very important that you use fresh garlic do not use garlic powder in this case what’s gonna happen if you use garlic powder is you’re not getting nearly as much of the powerful enzymes in the antimicrobial antibacterial effect so here’s what’s cool about garlic as soon as you cut garlic it’s dynamic changes there is something called Allanon and garlic and as soon as you cut it it reacts with oxygen and starts to turn into something known as Alison not like the name Alison that al Li CIN Alison that Alison is one of the most powerful antimicrobial antibacterial components known to man very very powerful so if you’re having a lot of bloating issues if you’re trying to combat a lot of digestive issues garlic is really powerful but after about 20 minutes after being cut it loses its effect so you want to make sure you get that as soon as possible I have got about a quarter of a clove here so not a whole whole lot of garlic so I’m gonna add a little bit of pink salt to it here’s the thing make sure you’re using a pink or a truffle salt I talked about this in a lot of my other videos but you want to make sure that you’re getting all the minerals in there you want all 84 minerals you don’t want to be left with anything aside if you end up putting regular salt in there I’m sure it might taste fine but you have heavy iodized salt which doesn’t have any other minerals balancing it out you’re gonna potassium you don’t have magnesium you don’t have phosphorus you don’t have any of that stuff so you’re looking at straight-up on a post sodium which I sound like a broken record if you watched my videos I talked about that all the time so see how that’s thickened up that’s exactly the way we want it nice white sauce exactly the way we want it to be you can make it a little bit thicker if you wanted to you can always add some extra almond flour into it again just make sure it’s the blanched stuff whenever possible you can also add some more ghee and it’ll thicken it up but I don’t want it super super thick I also want to keep the calories kind of down so a little bit thinner for me is all good so now let’s get into the crust part cauliflower Foods has been very very generous by donating tons and tons of these cauliflower crust pizza so that I could make amazing pizza so huge shout out to them and I want to talk about the benefits of cauliflower cress really quick so it’s not like you normally think it’s not like you’re just getting a low-carb variation of a crust you’re actually getting a lot of hormonal benefits so I talked about something known as DN dole methane also known as dim okay dim is a derivative of cruciferous vegetables so we’re talking about broccoli we’re talking about cauliflower very very very powerful at modulating estrogen and testosterone within the body so if you’re a female and your estrogen levels are a little bit too high causing you to have any kind of mood issues or hot flashes or anything like that it can make a tremendous difference like a big big difference and if you’re a guy and you’re trying to modulate your testosterone levels a little bit it can help you out too so if your estrogen levels are up here you have a negative feedback loop system which makes it very very tough your testosterone levels to ultimately grow up so that’s going to put you in a situation where you’re not ever in balance the more estrogen you have the more it’s going to continually cycle that way testosterone levels are going to decrease estrogen is going to continue to increase so we want to make sure we balance that now normally what you do with these crusts is you want to cook them up a little bit first so I’ve already done that so with these kind of crusts what you want to do is you want to cook them for a few minutes first usually just 5 or 10 minutes just to get it so that they’re not frozen anymore and you want to cook them just so that they have a little bit of a baseline cooking so that when you put it in the oven you just have to top it off let me go ahead and grab that so this has been in the oven at about 375 for literally just about seven or eight minutes just enough to get the edges a little bit toasty just enough to cook it so it’s not frozen anymore okay so now what I’m gonna do is I’m gonna go ahead I’m gonna take my white sauce base which is awesome and if you wanted to go ahead and spread a little bit more garlic if you’re trying to get a little bit more the antibacterial effect so the big thing about cauliflower crust pizza is that they actually use the entire stock they use the whole plant so not only is this really really good for the environment but this is also really powerful when it comes down to nutrient value not sure if you knew this but a lot of the fiber and a lot of the overall minerals that we want are in the stock you see we’re only eating the flour for the most part that’s like throwing away 40% of the plant like the stock contains a ton of what we need and on a ketogenic diet you need those specific kinds of insoluble fibers from time to time because that’s what’s going to the heck out of making it yourself my dad is probably laughing his butt off at me right now looking down saying like the heck are you doing like you’re totally defaming a round Table Pizza by making your keto crap but Dad come on man so go ahead and put as much of this as you want I’m gonna have quite a bit extra but there’s a lot of things I can do with this I can end up putting it over pasta later it’s just it’s a good old white alfredo sauce so you’re totally good to go I try not to put it out all the way to the edges because what’s gonna happen is because it has butter and ghee in it once it goes in the oven it’s gonna melt a little bit and we don’t want that to happen where it’s running into the situation where it’s kind of spilling over cuz it starts to melt now there’s a lot of different things you can do in the way of toppings I’m keeping this simple like if you’ve ever had a garlic chick Pizza before it there’s not much on it except for garlic sauce and chicken so I’ve gone ahead and I’ve grilled up some chicken already super simple nothing fancy at all just got and place that on there now I’m telling you the star of the show here is the crust in the sauce chicken take it or leave it just remember you want to try to keep it at that three-to-one ratio of fat to protein this is probably even a little bit more at this much chicken just to give you an indicator what your macros should look like this is probably too much chicken you don’t need that much protein I’m telling you right here and now so now I’m gonna go ahead I’m gonna put this back in the oven it’s literally just gonna go in there for five to seven minutes just to make sure the chicken is warm make sure the crust has finished off cool thing about these crusts they’re already totally precooked so you’re just a matter of getting them a little bit toasty and finishing them off so while that’s cooking I want to share with you some really awesome stuff I’m gonna show you quite a few little glimpse of what it’s like to meet me in person and some of the speaking events but now this stuff is done so it’s been in here for literally like eight minutes I know you weren’t seen eight minutes of footage but we fast forward a little bit for you it looks pretty darn good to go so before I put in there actually head also put a little bit of some basil on there and put a little bit of chunks of garlic on there so I’m gonna bring this on over we’re gonna cut it up and serve it on up now I know it doesn’t look like a round Table Pizza you can do a side by side look at it and you’re definitely gonna notice that but I will tell you it’s no ordinary pizza and round table is a lot more ordinary than this sorry dad I don’t cut it on up so remember guys we have barely any carbs in here I’ve got a couple of carbs in the crust we’ve got a couple of carbs coming from the almond flour the blanched almond flour remember and that’s literally it so we’re talking with this pizza like literally if you were to have half the pizza you’re probably talking four or five grams of carbs barely anything in this pizza I’m using the red pepper crust from cauliflower to cut a couple of different options if you wanted to add a different zest to it but I wanted to add some spice to it it was close as I’m gonna get to Round Table but without the heavy cream without the excess sodium and without the glutinous crust it’s gonna trigger a probe immune response in your body that’s gonna send you hugging the toilet or worse feeling in flames for a couple of weeks you honestly the crust is a little bit softer than a normal pizza crust but that’s okay because it kind of has that keto feel to it so it’s super hard to get a crispy crust in keto it’s just really hard to come by to be completely honest unless you’re using one that has a lot of almond flour in it and like I said before a lot of times when you have almond flour in the mix you end up triggering a little bit more of an inflammatory response because a lot of times you end up having that that husk of the almond in there too so just have to be cognizant of that but anyhow you definitely want to give this recipe a shot any of the excess sauce I’m gonna use over some spaghetti squash later in the week so it makes it perfect I can use those leftovers and also you can fold this up into a calzone but I’ve also been experimenting with making it in to a different kind of alfredo lasagna whole different ballgame adding some spinach on it maybe I’ll bring that recipe to you next time but as always make sure you’re
