hi guys welcome back to CJ’s pita kitchen tonight we are going to be making another casserole because that’s how I roll and it is called keto company casserole it’s very simple it only has a few ingredients it’ll be very fast to throw in the oven on a busy night so we’ll come along with us started this recipe was originally a mean other tastes a cold recipe tastes a poem is a magazine that you can usually find by the checkout stand that has favorite recipes sometimes they’re old-timey recipes a lot of times they use a mix or they start out with a base of simple ingredients this one actually started with a base of a boxed wild rice but rice is not Kido so we omitted that ingredient but for the most part the rest of the recipe is exactly as it was in the taste of home magazine now if you would like to put this casserole over some kind of rice product like rice to cauliflower or some type of noodle you absolutely could do that but because this recipe has broccoli in it we just decided to go ahead and omit that particular ingredient that’s completely up to you and you can make it in whatever ingredient that your family enjoys so let’s go ahead and get started so for our casseroles ingredients we are kneading about two cups of cooked chicken and I have thighs here this woods definitely a place that you could use a rotisserie chicken that was easier for you quicker but you need about two cups and I’ve already cooked it so I’m going to put everything that that’s gonna go in our casserole to begin with in a large bowl so I’m going to call this chicken and then we also need about a cup of cubed boneless ham and you can generally find it at the end of the pork aisle in most grocery stores they have it already cubed up for you if not of course you can just get him and cut it into chunks but I have taken mine and I have warmed it up and slightly browned it in a little bit of bacon fat if you don’t have bacon fat or if you don’t keep your drippings you can just use a little bit of butter so I’m going to add that to the pan we also need about two cups of broccoli florets and I have steamed mine in the microwave so they’re not completely it’s not completely soft it still has a bite to it but it is kind of partially cooked and you could use frozen if you wanted but they do need to be florets so it’s it’s tastes better if it’s not like broccoli pieces with the core in it to the florets are a little softer so that’s what you need and I’m gonna put these in my bowl with everything else I’m just draining them a little bit from my steam water okay we also need about a cup of sliced fresh mushrooms and these happened to be baby portobellos but you could use white mushrooms button mushrooms regular portabellos whatever you like but you need about a cup so that almost the whole package okay so those are our core ingredients I want a separate smaller Bowl we’re gonna make our sauce this is just the bowl that I used for stevia my broccoli and for our sauce to put over our company casserole we need to start out with a cup of plain yogurt and I have Greek yogurt here and if you can find it sometimes it can be a little bit difficult but try and get a yogurt that’s not nonfat this one has plenty of fat in it it’s a full fat yogurt so that keeps the carbs low it’s nice and creamy very thick yogurt and we’re also going to need about a half a cup of mayonnaise so to season our sauce we are going to need about a tablespoon of yellow mustard if you like some other kind of mustard you couldn’t feel free to add that but I’m going to add yellow mustard and then we also want to season our sauce so I’m going to be using my Trader Joe’s 21 seasonings salute and I’m going to be pretty generous with it because this is going to flavor our sauce and I’m also going to add a little bit of garlic powder I need a generous pinch of salt I mean I’m using pink Himalayan sea salt and then I also want some pepper so we’re just going to stir that around now we’re gonna go back to our we’re gonna pour our sauce over we’re gonna stir that all around just to make sure that our ingredients get coated with our sauce now to this we’re going to add some cheddar cheese and you can put as much cheese as you would like I’m gonna put in about a cup so that’s about half of my package and just kind of stir that around because we’re gonna be adding some more cheese on the top we’re gonna be adding parmesan on the top so that is all ready to go into our casserole dish and I have a 9 by 13 inch casserole dish here to get this in and spread it all around evenly now you want to pre-heat your oven to 350 degrees and this is gonna cook for about 45 minutes to an hour and to finish off the top before we put it in the oven and you’re gonna put some grated Parmesan on and I just got just finely grated parmesan if you prefer the powder you could absolutely use the powder bit and this is about 6 ounces okay so we are going to put this in a 350 degree oven for 45 minutes to an hour and then we’ll be ready to eat [Music] it’s ready nice and golden-brown I’m gonna let it sit for about five to 10 minutes and then sir I only ended up needing to a bake mine for 45 minutes so this was in my oven for 45 minutes so as always it depends on your oven but this is what it should look like whether it’s between 45 minutes or an hour hi CJ all right what delicious meal are you going to be tasting tonight I think this is called a keto company cultural company casseroles no company no company capsule yeah all right so we just got this out of the oven so it’s over yourself feel really warm um really flavorful I’m sure that this is one of those things that will actually be better the longer it sits because I mean we literally just got this out of there still steaming hot so but that’s really good really flavorful most casseroles taste better the next day we didn’t use we we made this recipe our home I made a key to fine and it’s a really
