Keto Chocolate Chip Cookies


[Music] good morning welcome back to my channel this is Gd so today I’m making some keto chocolate-chip cookies and this would be my first time making this recipe it’s of course it’s not my own recipe it’s from a I forget the girl’s name but her her website is castaway kitchen calm and it’s it’s a healthy cookie I make them actually for ED because he’s one chocolate chip cookies but I’m not gonna tell him at their Kido until after he tastes them so let’s get started so the first I’m gonna do the wet ingredients first and it calls for one large egg and of course this is my my chickens that I’m using softened butter instead that’s mine you know fast so we’re gonna use three tablespoons set this aside of softened I’m using unsalted butter what I have it I guess you could use salted butter too so there’s one two that’s pretty good size three of those mix this up and this butter has actually been sitting out overnight so with my egg okay we’re going to add some vanilla calls for about a teaspoon I’m just gonna kind of eyeball it flavor so now we’re gonna add this word sweetener which is what I use for my baking I don’t use regular white sugar anymore this is the granular when you they also have the powdered sugar one but I’m adding a third a cup that’s what readings that I have so far okay now we’re gonna set this aside a minute and we’re gonna do the dry ingredients let’s put this aside my spatula and I’ve already got my ingredients you know measured out so I have two cups of the Bob’s Red Mill superfine almond flour which is the kind of flour I like to use one tablespoon of vital wheat gluten I think you can use pasteurized gelatin also and what that does is just gives you the chewiness and elasticity for your cookie or for whatever you’re baking so I added one tablespoon of that 1/2 teaspoon of baking soda 1/2 a teaspoon of she calls for a flake salt I’m using pink sea salt so we’re just gonna blend this up together don’t get mad a little my other little whisk out was kind of wet easier to mix it up that way okay that’s good okay okay next we’re going to combine the wet scraping in there meantime I got my oven preheating to 350 I think she did say if you have a convection oven then you want to preheat it to 325 okay so let’s lose this then some that’s we can I just don’t have the coconut milk to add she’s my spatula I kind of mash it down try to get this all incorporated it’s coming together pretty good get all those dry ingredients okay all right now you need to add the coconut milk okay we’re gonna add 1/3 cup of coconut milk I’m just gonna kind of add it gradually I think to see it’s really not that much better I’m just gonna add all of it now get all that goodness out of there I love coconut milk make sure let me know I’m gonna have to make it coconut cheesecake but you used to um not coconut milk but you use the coconut fat because you can buy it by the can and it is so good it makes your cheesecakes and stuff so creamy okay it’s just mixed up all right I’m gonna add the chocolate chips okay the dough is just about together here okay and then I’m adding 1 cup of the Lily’s baking chips these are stevia-sweetened vegan non-gmo that’s dark chocolate no sugar added so we’re gonna add a cup of that oh my good wait to try them chocolate chips are blending up really well okay I don’t want to overwork it okay I’m gonna get my cookie sheet ready now we’ll be right back okay those all together now it says to roll one inch balls in your hand like that it’s a little bit bigger than then place them 2 inches about two inches apart and then flatten down with your you can use your hand or spoon I’m gonna try the spoon I like that better just like that she said according to her recipe she got 20 about about 20 cookies get them on here and then we’ll um flatten down roll it’s kind of nice not not too sticky in my hands not too sticky and you can always rinse your hands off some of these down here cuz they’re not gonna I don’t think they’re really gonna spread mean as much as what I conventional chocolate chips spread this just kind of helps them out a little bit anyways okay so I’m gonna go get the rest of these put on here as many as I can and I will bring you back when the first batch is finished okay the chewy chocolate chip keto cookies are all finished I got about 23 cookies out of my batch because I made really hot so let’s break one open let’s see let’s this one’s got a lot of chips in it or they all have a lot of chips in a bit they’re nice and moist and I think my husband’s got a lot mmm really
