hi guys welcome back to CJ’s ko kitchen well it’s not Taco Tuesday but we are going to make making something at the yummy and Latin and very easy I got my fiesta shirt on we are going to be making chicken fajita casserole because you know I love casserole so come along with me and let’s get started so fajitas are relatively new it’s not actually a true Latin Mexican dish it is actually tex-mex or Tejano so it has its origins in the southern United States and northern Mexico and it’s very new in fact the word was not really originated until 1971 so it is not very old Mexican dish but is extremely popular a lot of times you’ll see waiters and waitresses bringing out sizzling fajitas Mexican restaurants so they are very popular and it origins from the spanish word for Faja which is skirt or belt because traditionally this was made with strips of beef skirt steak and you can still make it with beef if that is what you prefer but tonight I’m going to be making the chicken it would also be very good with pork or shrimp any of those would work very nicely in this dish but it’s very easy it only has seven ingredients and it only cooks for 30 minutes so come along with me and let’s get started so I have done a couple of pre steps for our fajita casserole and you are going to need about six or seven chicken thighs you could use a different type of meat it wouldn’t be you know chicken fajita casserole will be just by heat a casserole but you could also use skirt steak or other traditional meats or fajitas and this is about seven thighs and I have cut them up and they’re almost completely cooked there’s a little bit of pink left which is not a big deal because we are going to be baking this for a little bit in the oven and then over here I have sauteed a half of a medium onion or one small onion and one red pepper and I just cut those into strips and they’re lightly browned so the next thing that I want to do is I want about one cup of rice cauliflower or cauliflower pearls it’s sometimes called you can write it yourself but a lot of grocery stores are now carrying in art III right and this is going to give us something that is reminiscent of the instant rice that was in the original Betty Crocker recipe that I am hybridizing this from so I just added that to my other vegetables and I’m just kind of kind of let that saute for a minute and soften up and then when that it gets a little soft we’re going to go ahead and add our other ingredients into this larger pot and since we have already sauteed our other vegetables and they have the pretty brown carmelization that you would like for classic fajitas I’m going to put a lid on it that will assist in steaming the cauliflower since we don’t necessarily need a brown on earth and it’s on about medium heat so assisting in it getting softer and more quickly I’m going to add a couple of tablespoons of chicken broth you could use beef broth if you want or vegetable broth just to slightly soften it the cauliflower is going to absorb it which is going to assist it in getting soft like you would with an instant rice product which is what this recipe is mimicking okay so our cauliflower rice has softened a bit now we are going to add our chicken into this big pan get all your yummy clippings there just I stir everything around okay now we are going to start adding some fat and some seasonings so the first thing that we need do excuse me still dealing with my cold is 8 ounces of softened cream cheese we also need about a third of a cup of sour cream I just wanna start with that keeping our temperature on low because we’re basically just trying to incorporate everything I’m not trying to cook it because it is going to go into the oven for about a half hour they’re just getting that evenly perforated okay so now we have a nice creamy sauce because we definitely don’t want our fajitas to be dry now we need to make them taste like fajitas so that is generally done with a fajita seasoning I have managed to find one at my local grocery store that is a no MSG fajita seasoning that doesn’t have any binders or fillers in it if you can’t find a product like this you could absolutely just use taco seasoning that works very well we actually have a recipe up on our channel and blog about making your own taco seasoning but I’m going to be using about a third of a cup and I’m just going to sprinkle that in and then I’m going to stir everything very well so that every part of our casserole has some seasoning and I have now turned the burner off so this casserole only has about seven ingredients and you could use a rotisserie chicken in this step if you’d like but also be very good with pork if you had leftover pork chop or or closed that would also be very good the heaters are made with just about anything nowadays even though they started out originally with the skirt steak okay so there is our lovely mix our final step for a casserole before we put it in the oven is we are going to be adding about two cups of cheese that is 8 ounces and I have a Mexican blend here which is cheddar and Monterey Jack combined I’m just going to put that in and I’m going stir it up and that is going to go into our 9 by 13 inch casserole dish okay now I have preheated my oven to 350 degrees and we are going to cook this at 350 degrees for about 30 to 40 minutes depending on the temperature of your individual oven okay so now we are going to pour our mixture into our casserole dish with all of its cheesy goodness and we just want to spread that around you can see the beautiful red pepper so we are going to slide this into our preheated oven for 30 to 40 minutes until it gets nice and golden and bubbly on the top okay it is ready to come out it smells very good so it looks like you can see the beautiful red peppers on top [Music] so we’re gonna let it sit here for about ten to fifteen minutes and just give it a chance to solidify a bit and then I’m going to serve it and let CJ have a taste first pista is always the hardest make it out hi CJ all right hi it’s time for a fiesta and I thought that meant one Ghostly that’s a siesta haha that sounds more feeling right now that is it isn’t it yeah it was very tired so tonight we have chicken fajita that’s raw nope looks good oh you mean like why again you fiery hot like temperature body like everything yes hmmm that’s really good it tastes like chicken fajitas that’s good nice flavor it’s really cheesy just me I wasn’t gonna say anything about cheese I can read your minds from over anything it’s cheesy and no it’s really flavorful it’s cheesy and I’m like probably like every casserole it gets probably will get better because I think the seasonings will probably intensify yeah just it I know you put sour cream in it yeah a little bit it I like it but small amount I’m sure when we eat we’ll probably put some more sour cream on it but I wanted to taste it but just I
