hey guys today I’m going to show you a very simple and delicious way to make a low-carb pumpkin spice latte this recipe is of course gluten free and it can also be made paleo friendly okay let’s get started you will need organic coffee enough to make about 2 cups worth 1 cup of full fat coconut milk and be sure to shake the can really well to make sure that the cream and the liquid aren’t separated 1 tablespoon of coconut oil MCT oil or brain octane oil which is what I like to use 3 to 4 tablespoons of organic pumpkin puree 2 tablespoons of grass-fed butter and you can omit this for the strict paleo option 1/2 to 1 whole tablespoon of pumpkin pie spice 1 teaspoon of organic vanilla extract and 1 tablespoon of your favorite natural sweetener I like to use birch the aisle at all because it’s local I scenic you can also use coconut palm sugar or even stevia for this first you’ll need to make your coffee go ahead and ground your coffee beans if they’re not ground already I used about 4 heaping tablespoons of coffee grounds for this recipe I’ll be using a French press to make my coffee but you can also use a coffee pot add two cups of water to a saucepan or kettle and bring the water to a bowl while waiting go ahead and add your coffee grounds to your French press and once the water is boiling pour over your coffee grounds and let it steep for about five minutes while the coffee is steeping at all of your remaining ingredients to a saucepan over medium to high heat as its heating you’ll want to continually whisk the mixture to avoid burning it and then once it comes to a light boil go ahead and remove it from the stovetop now add your coffee and pumpkin mixture to a high speed blender and blend until it’s smooth and frothy by the way this recipe yields two servings and can be kept in the refrigerator for three to four days it can even be consumed as a cold beverage as well and feel free to sprinkle a bit of cinnamon on top for an extra kick now it’s ready to serve I hope you guys enjoyed this recipe and remember you can always print off the entire recipe over at my blog the link will be in the description box below see you next time
