Healthier Holiday Bark – 3 Ways! – Mind Over Munch

Oh my gosh! Santa sent ME a letter!!! “Dear Alyssia, Thank you SO much for the peanut butter blossoms last Christmas. You always make the best holiday treats! This year, I have a request. I love holiday
bark, but it’s always SO unhealthy! Could you make a healthy holiday bark for
me this year? I’d really appreciate it. And, don’t forget,
I’m on a new diet! Ho ho ho!” I can make healthy holiday bark! But, wait—does Santa eat low fat? Or low carb?? Or did he go vegan??? There’s no time to write him back and ask… I know! I’ll just make all three! Hey munchies! We’re cookin’ up
treats all month long, and today I’m giving you HEALTHIER holiday
bark, 3 ways! We’ve got low fat, low carb and raw vegan, so there’s different options that might
suit your different lifestyles! First up: strawberries
and cream! In a bowl, combine Greek yogurt, maple syrup,
vanilla extract, a squeeze of lemon juice and a pinch of salt. Pour that onto a tray lined with parchment, and use an offset spatula to spread it out,
¼ of an inch thick or less. Top it off with freeze dried strawberries, and I also like to add some toasted and chopped
pecans since it is the season where nuts are delicious
with everything, after all. I guess that’s actually every season… Anyway, freeze that tray for 4-6 hours, and
when you remove it, you can use a knife to cut a piece off and
then break it into pieces! Because the strawberries are freeze dried,
they don’t get mushy when eating the bark so it’s a great texture, and the yogurt
keeps this option lower in fat! And I love the white and red colors together
for the holidays! Next we’ve got a chocolate, almond & sea
salt bark. How about a thumbs up if you’re enjoying
those screenshottable recipe cards? In a double boiler, I melt down cocoa or cacao
butter. Then I stir in unsweetened cocoa powder, liquid
sweetener of choice— make sure it is a sugar-free variety that
doesn’t affect blood sugar if you want this to be low carb, I will link
the fiber syrup that I used in the description— and a pinch of salt. Once mixed, remove from
the heat and stir in vanilla extract. Pour onto a pan, spread, and then add sliced
almonds and a sprinkle of salt. It’s ready to freeze! When you break it up, you’ll have a chocolate
bark that looks impressive, but you saw how easy it was to make! And chocolate and salt are just one of my
favorite combinations. If you’re enjoying these lifestyle friendly
recipes, be sure to subscribe! And don’t forget to hit the bell so you
can be notified of new videos every week. The last bark of the day is a cranberry pistachio— and it happens to be raw and vegan! Start with melted coconut oil. Stir in cocoa or cacao powder and maple syrup. Pour the mixture into the middle of your tray
and let it spread. This one is thinner, so you may not need to
spread it at all. Sprinkle on some chopped pistachios and dried cranberries, freeze until firm, and then break it into
pieces! Cranberries and pistachios not only taste
delicious together, but the green and red are so festive! Keep in mind, all of these barks will melt
at room temperature, so store them in the fridge or freezer. This last one is also the base of my peppermint
bark from my Ho Ho Healthy eBook, available at mindovermunch.com/ebooks, and you can get 10% off any eBook or package
this week only with the code “BARK.” I hope you enjoyed these lifestyle friendly
bark recipes! And get get creative and make your own combos,
too! Let me know which is your fave in the comments
below. I’ll see you next week, and remember, especially
over the holidays, it’s all a matter of Mind Over Munch! Yaaaaaaaaay. HOORAY. It’s Christmas!

  2. Your holiday pjs are so cute! I have a Christmas pajama party to go to this weekend. We're doing white elephant gifts:)

  4. Hi Alyssia! I just love your videos and the first one looks so good! But I have a nut allergy. Could you make a video someday about yummy foods that don't have nut ingredients. Thanks and Merry Christmas!🎄🎅💓

  5. Alyssia, you are too cute in your onesie. Santa sure is lucky to put in a special request from you. After all he is Santa. Great tip on the raw bark, also loving the little expense and super easy. Thanks as always! Happy Holidays to you and Christian😸👏

  6. I’m living for the intros of your videos! So much love and effort put into it and so funny! Gonna make these tomorrow! ✨

  7. The raw vegan one isn't technically raw because of the maple syrup and how it's processed. Common misconception not a lot of people know about, but I'm sure you can easily substitute it with something else like raw agave. Nevertheless, great video as always.

  8. Yours is one of my absolute favorite healthy eating channels! It's so professional, fun, and I love how hard you work to make recipes for everyone, regardless of diet. That can be so tough with all the variety in eating these days. Keep it up! (Also, thanks for making me crave holiday bark now…)

  9. OMG these look delicious!!!!!! These would be perfect on top of ice cream, by the way I love that intro and those pajamas lol, anyways have an awesome day

  10. Honestly, the screenshot recipes are the most genius thing, idk how many times ive screenshot multiple parts of a vid or page trying to cook with my phone out!

  11. This would make the perfect homemade gift:)
Merry Christmas Alyssia & Christian…..and your adorable pup, who's name I can never remember….lol.

  12. For the low carb bark, I can't do almonds I break out into a rash. How high would the carb count go up for a different nut? This just looks so yummy for the holidays!!!

  13. Hi, I like your recipes do u have any idea to make crispy and chewey cookies without using sugar and all purpose flour what else we can substitute i want to avoid all purpose flour and sugar please reply

  14. I really enjoy your videos and I was wondering if you could make a healthy pecan pie recipe? That would be really awesome, thank you!

  15. How do you come up with all of these creative, delicious recipes? You're a genius. I wonder if it takes hours of trial and error, or how you think to add each particular ingredient together. It always works!

  16. hahaha loved the intro!! Your pjs looked soo comfy. Totally needed some holiday bark ideas for this Christmas, thank you!

  17. YUMMY!! I just wish I knew where to find freeze dried strawberries around here, as Strawberries & Cream is one of my very favourite things. In fact, might have to keep this one in mind for Wimbledon Championship Weekend come July. 😊

The others are very doable though & looking forward to giving them a shot.

Sigh…How I wish I could be in a Theatre tonight w/my fellow Jedi. There are times being in the middle of nowhere hurts more than normally. At least some great news today w/Harry & Meghan announcing the date today & I'm breathing a big sigh of relief, as it's NOT the same weekend of Toronto Stars on Ice!! I've only missed two years since 1993, one thanks to knee surgery & the other time? You guessed it!! It was the same date as William & Kate's Wedding in 2011 & you couldn't find a room anywhere in Toronto that weekend thanks to all the other Weddings taking place that day by people wanting the same Wedding date as the Cambridges. 🙄🙄🙄

So I can start making those plans at least. Even so…I WANNA BE WATCHING THE LAST JEDI RIGHT NOW!!

Sigh…I know, I know…I'd better not pout. It's so hard to remember that tonight though. ☺️☺️

  18. Oh, Alyssia I love you, you are so funny and so so creative. Please make more healthy cookies and if possible healthy cakes too.

  19. Never like bark because it was always a mix of peppermint and chocolate which I am not a fan of. I love these! I really do especially the strawberry yogurt!

  20. I know its not the holidays at the moment but I loved it anyway!!! 🙂 The cranberry pistachio looked SO good.

  21. I love the strawberries and cream bark, and my older sister loves the sea salt chocolate bark! Can we eat this all the time,or should we this occasionally? We eat it very occasionally, but just checking! Thanks!
