Vegetable Stew Ingredients Potato – one cup diced Carrot – one small cup Beans – one small cup Green Chillies – five numbers sliced Star anise -one number Cinnamon -2 pieces Cloves – three numbers Ginger 1 inch piece Coconut milk 1 bowel Coconut oil 1 tbsp Curry leaves two numbers Pepper – five numbers Salt – to taste Water Into the cooker put one cup potato one small cup each of carrots and beans and six green chillies. Add water to the vegetables in
the cooker. Light the stove. Into a small warm pan add star anise, two pieces of cinnamon, 3 clove and 4 black peppers Fry it for about a minute Crush it and add to the vegetables. Also add 1 inch ginger crushed and salt to taste Cook it till two whistles are heard. When the pressure is completely released
open the cooker and add coconut milk Coconut milk would give more taste. Let it boil for some time until the Stew thickens. Once it is ready transfer this
to a bowl Add curry leaves & 1 tbsp coconut oil Serve Hot
