Today I will be making almond saffron milk. This is a very festive drink. Milk with blend of nuts and flavored with saffron and cardamom makes a delicious drink. Saffron gives a nice orange color and aroma. This recipe will serve 2. For this recipe we need: 20 oz of milk 10 almonds, which I have already soaked and peeled. 10 pistachio nuts I have soaked and peeled. 1/4 teaspoon of cardamom powder Few strands of saffron. 2 tablespoons of sugar, adjust to your taste. About 1 teaspoon of sliced pistachios to garnish. I will grind the nuts. Almonds Pistachios And now I am going to add some milk and blend it again to smooth paste. Just couple of spoons of milk. It looks good. And blend it very fine. I will boil the milk on medium high and then add all the ingredients. First I am going to boil the milk on medium high. Do stir occasionally so milk doesn’t burn from the bottom. Milk has come to boil. So I will lower the heat to low medium. And add the nuts. Cardamom powder Sugar And saffron. Just before adding the saffron, crush them with your fingers. Mix it. Now let it simmer on low heat for 6-7 minutes. Milk has been boiling for about 5 minutes. It has a very nice aroma of saffron and cardamom. So milk is ready. Almond saffron milk can be served hot or cold. Just before serving, you can garnish it with pistachio. It gives a nice color. This is classic Indian beverage. This brings back lot of good memories from my childhood. In cold winter days, my father will bring this drink at night just before going to bed and will say if you drink this it will keep you warm and cozy. Of course we all enjoyed it. Thank you. Till we meet again, check out more recipes on manjulaskitchen.com.
