Almond-Crusted Baked Chicken Strips | A Sweet Pea Chef


– Hey there. This is Lacey Baier with A Sweet
Pea Chef, and today we’re going to make some tasty and healthy baked chicken strips. For
the coating, we’ll use a savory, crusted almond mixture using lightly salted Blue Diamond
almonds. It is so darn yummy. So let’s get started. First, start preheating your oven
to 400 degrees, and line a baking sheet with parchment paper or aluminum foil and set aside.
In the bowl of a food processor, combine one cup of the Blue Diamond lightly salted almonds,
one-half teaspoon garlic powder, a half teaspoon paprika, one quarter teaspoon ground black
pepper, one-eighth of a teaspoon ground mustard, and one-eighth of a teaspoon cayenne pepper.
We’re going to pulse this mixture until the almonds are crumbly and look like a thick
flour. Transfer the almond coating to a shallow dish and set aside for just a sec. In a separate
medium-sized bowl, whisk together two eggs and one teaspoon olive oil. Now we need to
prepare the strips. To do this, we’re using two boneless, skinless chicken breasts and
we’re going to slice them into quarter inch slices. Starting with the egg mixture, we’re
going to dip the chicken slices into that to get fully coated. Then, we’re going to
give them a little shake to let any extra egg drip off. Transfer to the seasoned almond
coating, and gently toss until the chicken strips are completely covered. Remove and
transfer the chicken strips to the baking sheet, and repeat with the remaining chicken
allowing some space between the chicken strips for even baking. Place in the oven and bake
for 20 to 22 minutes turning once halfway through until the chicken is cooked through,
and no longer pink in the middle, and the tasty almond coating is nice and golden. So,
I don’t know about you, but I love me some dipping sauce with my baked chicken strips
and what better flavors to go with this almond-crusted baked chicken strips than some homemade, clean
honey-mustard dipping sauce. To do this, in a small bowl combine one tablespoon plain
Greek yogurt, two tablespoons yellow mustard, two tablespoons honey, and one teaspoon freshly
squeezed lemon juice. Whisk this until it’s very smooth. Now, not all yellow mustards
are clean so be sure to check out the ingredients list, and confirm it doesn’t contain any processed
sugar or other processed ingredients. The shorter the ingredient list, the better. All
right. So there you have it. Now we have our delicious, healthy, and super yummy almond-crusted
baked chicken strips. So we can dip into our sweet and clean homemade honey-mustard dipping
