First of all, I’m going to put Almond powder and Sugar Powder in a sieve. Make meringue with egg whites. Make a hard meringue by dividing the sugar. Add some food coloring. I put pink pigments in it to match the strawberries. Add the powdered ingredients and mix carefully with a spatula. This is the most difficult and important process of making macaron! I’ll put the macaron paste in a piping bag and make it 6cm in diameter. Dry at room temperature for about an hour. When it is dry enough not to be smeared by touching it with your hands, bake it in an oven and cool it down. Add sugar to egg yolk and mix. I added vanilla bean paste and added flavor!
Scrape the seeds and mix with the milk when using vanilla bean. Put the starch in a sieve and mix. I’m gonna put the milk in the pot and heat it up. Combine warm milk in egg mixture little by little. Return to pot and heat over low heat. Turn off the heat, transfer to a bowl and cool. Divide the butter in a soft condition little by little. Store the finished cream cold in the refrigerator for a while and use it. Wash strawberries clean, remove tops and cut in half. Now I’m going to finish the macaron!
